Minnesota Lake Rice
Canadian Lake Rice
Wild Rice Blueberry Pancakes

Ingredients:

  • 1 cup cooked KC's Best Wild Rice
    Cooking Instructions
  • 1 Cup Milk
  • 2 Eggs, separated
  • 1 tbsp Canola Oil
  • 3/4 Cup unbleached flour
  • 1 tbsp Sugar
  • 1/4 tsp Salt
  • 2 tsp Baking Powder
  • 1 tsp ground Cinnamon
  • 1/2 cup fresh Blueberries
  • Nonstick vegetable spray

Cooking:

  1. In a large bowl, combine milk, rice, egg yolks and oil.
  2. In another bowl, sift together flour, sugar, salt, baking powder and cinnamon
  3. In a third bowl, whip egg whites to soft peaks.
  4. Pour milk mixture into flour mixture and stir until just combined
  5. Fold in egg whites and gently stir in blueberries
  6. Preheat griddle and spray with vegetable spray
  7. Spoon batter onto griddle and cook pancakes until bubbles appear
  8. Flip pancakes and cook other side

Serves 4
